Shaved Steak Pho

Instructions

  • 1 package (8 oz.) jack & annie’s shaved steak
  • 2 small cinnamon sticks
  • 2 star anise
  • 1 large white onion*, peeled and quartered
  • 4-inch piece of fresh ginger*, peeled and halved lengthwise
  • 4 Cups (32 oz) vegetable stock or broth
  • 4 Cups water
  • 3 Tbsp reduced-sodium tamari or soy sauce
  • 6 oz (one large handful) rice noodles
  • 2 Tbsp neutral flavored oil
  • 5 oz thinly sliced mushrooms
  • Sprigs of fresh basil (Thai Basic if available) or cilantro
  • Sprigs of fresh mint
  • Thinly sliced green onions
  • Very thinly sliced fresh jalapeno (omit if sensitive to spice)
  • Small wedges of lime
  • Garnish
    • Mung bean sprouts

Preparation

  1. *Optional: turn on a broiler or pre-heat oven to highest heat. Once the oven is hot, place your onion and ginger in the oven and allow them to char lightly. Remove from oven, set aside, and turn off oven.
  2. Heat a large pot or Dutch oven over medium heat then add the cinnamon sticks, cloves, and star anise and toast until fragrant, stirring occasionally, about 3 to 4 minutes.
  3. Add the onion, ginger, vegetable stock, water, and tamari. Raise the heat to high and bring the mixture to a boil, then reduce the heat to bring to a simmer. Simmer for about 30 minutes to build flavor.
  4. While that is simmering, cook the noodles, in a separate pot, according to package directions, strain, rinse with cold water, and set aside.
  5. To prepare the mushrooms, heat 1 Tbsp oil in a skillet over medium heat until shimmering. Add the mushrooms and some salt and cook until the mushrooms are tender and lightly browned, about 4 to 6 minutes, then set them aside.
  6. Add another Tbsp oil, add the shaved steak to the pan and cook for 6-8 minutes, until browned and hot.
  7. Once the broth is done cooking, strain out the onions, ginger, and spices with a sieve or by pouring through a colander into another bowl. Season it to taste with extra tamari and/or salt.
  8. Ladle the broth into bowls, add cooked noodles, mushrooms, steak, and fresh garnishes.
